Apricot Sandwich Biscuits

I made these Apricot Biscuits as a wedding anniversary gift for my sister-in-law. They’re simple to make, fun to make and super yummy!

 


Recipe

  • 150g Butter (at room temperature)
  • 150g Sugar
  • 300g Plain Flour
  • 1 egg
  • 1.5 tsp Vanilla Essence
  • Apricot Jam

 


Method

1. Mix together the sugar and egg until smooth

2. Add a quarter of the flour and the vanilla essence

3. Keep stirring until the ingredients are fully mixed

4. Add another quarter of the flour and keep stirring until smooth

5. Repeat until all the flour is blended and a cookie dough has formed

6. Roll out the dough onto a floured service until approx 5mm thick

7. Using a 6cm round cutter, cut shapes from the dough

8. Using a sharp knife, cut heart shapes into half of your biscuits

9. Cover a backing sheet with baking paper, and carefully place your biscuits on top. Leave a little space between biscuits to allow them to swell in the oven

10. Bake the biscuits in the middle of your oven for 5-10 minutes, or until they are golden brown

11. Allow the biscuits to cool on a rack

12. Once cool, spread an even layer of apricot jam onto your biscuit bases and carefully top with a heart biscuit

13. Allow your sandwiched biscuits to set a little before eating
